New Chester seafood restaurant to open in former upmarket pub venue
The team behind The Sandbar already run an award-winning venue at Chester Market
Chester’s newest restaurant, The Sandbar, will open its doors on August 1. Describing itself as the city's first dedicated seafood restaurant, the new venue is launching at the old Watergate Street site recently occupied by The Henry Potts.
The restaurant is the latest opening from the team behind the award-winning Sandbar Seafood Shack in Chester Market, and will offer seasonal dishes inspired by seafood cookery from around the world. Backed by industry legend, Jerry Brunning, and led by Sandbar Seafood Shack owner, Martin Taylor, the restaurant vows to bring a fresh and exciting new angle to Chester's thriving food scene.
It will offer elevated plates in a refined but relaxed ambience and celebrate local farm produce, classic coastal seafood and original recipes from around the world. Diners can look forward to a menu that celebrates small, sharing and large plates featuring the best of the UK coast, including classic seasonal offerings such as whole roasted fish, Ynys Môn oysters and lobster, Shetland shellfish, and day-boat catches from the Irish to the Celtic Sea.
These sit alongside bold, globally-inspired dishes like Croatian fish stew and wild sea bass ceviche, showcasing the breadth, versatility and taste profile of seafood cookery. Owner Martin Taylor said: "I’ve experienced some of the best fish dishes - from humble beach shacks to world-class seafood innovators - and it’s always been a dream to share that passion with others.

Reservations open from today (July 1) and the menu will cater to all food fans and connoisseurs with meat, vegan and vegetarian options available. With The Sandbar Seafood Shack continuing to thrive in Chester Market, diners can also look forward to the added bonus of crossover dishes - bringing the flavours and creativity of both kitchens together.
The Henry Potts closed last summer and was put on the market for £250,000 in August last year.
